Chicken Rendang



Ingredients: 
1 kg chicken (cut and mixed with a little turmeric powder and fry half cooked)
2 cups coconut milk
1 cup grated coconut (fry without oil and pounded until smooth)
3 pieces of tamarind
chopped turmeric
salt / sugar / condiments adequate selection
oil


Ground ingredients: 
8 dried chillies
2.5cm fresh turmeric
2.5cm ginger
3cm galangal
3 stalks lemongrass - chopped coarse
1 large onion

Saute ingredients: 
5 cloves of garlic - chopped fine
3 red onions - finely sliced
1 cinnamon stick
2 star anise
2 cardamom pods
3 cloves


Method:
1 Heat enough oil and stir-fry saute ingredients until fragrant.
2 Then add all the ground ingredients and cook until the oil breaks.
3 Add the chicken, and tamarind. Mix well until the chicken is cooked.
4 Enter the coconut milk and cook over low heat until chicken is soft.
5 Add salt and sugar to taste.
6 When gravy thickens and sprinkle chopped turmeric leaves.
7 Now its ready to serve.
