Cream Cracker Layered Murtabak





Murtabak is a dish that is beloved by Malaysians at all times regardless what time it is. Myself I love Murtabak so much that whenever I go to the night market, I'm sure not to miss to take away as well. 





Today I want to share my recipe, Cream Cracker Layered Murtabak. This recipe is adapted from Azlita. Murtabak can be a little different if you use cream crackers as it's layers. But I could guarantee the taste is absolutely scrumptious. This dish's serving is enough for a family of 4-5 members.




Ingredients for The Filling
600 gm minced chicken
3 cloves garlic
2 cm ginger ( blended / mashed)
4-5 tablespoons of chicken curry powder
(Mix all the above ingredients and marinate them for a while)
3 large onions (cut into small cubes)
3 tablespoons oil

Method:
1.  Heat the oil and sauté the diced onions in a pan until it's half-cooked. 
2. Add marinated minced chicken in the pan
3. Add a pinch of salt and let it cook until the minced chicken gets a little dry. 
4. Divide the filling into five parts.

Ingredients :
45 pieces of cream cracker biscuits
1 cup coconut milk
1 cup evaporated milk
1 cup water
Enough amount of coriander / spring onions (sliced)
3 stalks red pepper (sliced​​)
3 green chilies (sliced​​)
150 g grated mozzarella cheese (optional)
10 eggs (add a little salt, a little beaten)

Method:

1.     Set the pan measuring 8 "x 8". Line the brass base and wrap it around with grease-proof paper or aluminium foil. Then coat the tray's base with some butter.
2.     Combine coconut milk, evaporated milk and water in a saucepan and heat over low heat. 
3.   Take 9 crackers and dip briefly in coconut milk / milk . (Do not cook for long time, because the cookies are soft and they could crumble.) 
4.   Then, arrange the cookies on the tray to get a base layer.



5.     Spread the filling with the flat on the first layer of the soaked cream crackers. 
6.   Add some red peppers, green peppers, coriander / garlic and some grated cheese. 
7.   Finally pour the lightly beaten eggs on it. 
8.   Repeat steps 3-7 until you have finished about five layers. 
9.   Add grated cheese onto to the top layer to get a nice shiny golden finish.
10. Leave it for a while (about 5-10 minutes) before baking in the oven with a temperature of 170 C for about 40 minutes. 
11. Let it cool before remove from pan.
12. Slice up a slice of the Murtabak and serve :)
