Lemongrass Grilled Chicken
1/2kg Chicken tights - cubed
Marinade :-
40g/5 stalk Lemongrass, chopped
4g Coriander root, clean and chopped - i replaced with coriander powder
2tbsp Evaporated milk (or whipping cream)
1tbsp Granulated sugar
2tbsp Soy sauce
1 1/2tbsp Oyster sauce
Salt
Method:-
- Put all the marinade ingredients into a food processor and process until finely chopped.
- Put the chicken into a plastic bag, and pour the marinade into the bag and rub the marinade into the chicken, seal the bag.
- Let it marinate in the refrigerator 6 hours or overnight.
- When you ready to cook, take the chicken out of the bag and remove the lemongrass from the skin of the chicken (you can't remove all of them but try your best because it will burn).
- Put the chicken chunks on the satay sticks, and grill for 10 minutes. ( i use Happycall pan to grill)
- Serve with rice and sambal belacan ( recipe is HERE)
