Carrot Chutney


Ingredients :-
Carrot   2
Big Onion   1
Garlic    2 pods
Ginger 1-2cm
Urad dal or kadalai paruppu    1/2 tblsp
Dried chilli   3
Tamarind   a small 
Salt   to taste
Peanut roasted  2 tbs
Olive Oil   2 tsp
Mustard seeds    1/4 tsp
Curry leaves    few

Method :-
1. In a pan , add  oil and fried urad dal or channa dal or kadalai paruppu. keep aside.
2. In the same pan fried onion, garlic and ginger. set aside.
3. Continue with dried chillies carrots and some curry leaves. keep aside.

4. Add fried urad dal, onion,garlic, ginger, dried chillies, carrots and curry leaves in a blender.
5. Dont forget to add roasted peanuts, salt and tamarind and blend together till fine paste.
6. Sprinkle with fried mustard seeds and curry leaves.

7. Now Carrot Chutney ready to serve with Idli or thosai....yum yum yummy....
